Miami Springs Woman's Club was founded in May 1939 by 60-odd women, all homemakers that got together once a month to plan the beautification of Miami Springs, discuss the daily problems that confronted them in civic and home life, and swapping great recipes
like this sponge cake by then President, Mrs. Post.
3 or 4 eggs
1 cup sugar
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon vanilla or lemon flavoring
1/2 teaspoon salt
Break eggs in bowl and beat for 2-3 minutes with electric mixer.
Add sugar and beat for 12 min. more,
add sifted flour and rest of ingredients.
Bake for 20-25 minutes at 400 degrees.
Makes grand soft sponge cake.
